  • Waffle Batter
  • 150 grams Self-Raising Flour
  • 1 teaspoon Baking powder
  • 1 teaspoon sugar
  • 1 egg
  • 250 milliliters milk
  • Caramel
  • 1/2 cup butter
  • 1/2 cup corn syrup
  • 1 cup soft light brown sugar
  • 1/2 cup condensed milk
  • Liquid Smoke
  • Butter maple cream
  • 50 grams butter
  • 100 milliliters cream
  • 1 tablespoon maple syrup
  • Bacon streaky, smoked thin cut

Steps

  1. Mix waffle batter ingredients together until ultra smooth. Pour into waffle iron and cook for 4 -5 minutes.
  2. For the Caramel: Melt butter in the microwave for 1 minute. Add other ingredients and cook on high in microwave for six minutes. Test a small amount in an ice bath, if you can work it with your fingers it's ready if you can't blast it for 30 second periods until you can. Once the ice test proves successful transfer to greased lined baking tray, sprinkle with salt and leave to cool in the fridge.
  3. For the Butter Maple Cream: Burn butter until it's just about to turn, smoke it if necessary by lighting a small fire in a ramekin and putting it out in the butter. Whip the cream. Add the liquid butter and the maple syrup to the cream.
  4. For the Bacon: Cook slow between two baking trays, it will render out and makes a great side.
  5. Assemble your Homer waffle by topping with the butter maple cream, caramel and bacon and dig in!
