• 2 eggs
  • 2 Mexican wheat tortillas
  • Coriander
  • 1 tomato
  • 1 chopped "serrano" chili
  • 1 chopped garlic clove
  • 1 purple onion
  • Frying oil, necessary amount
  • Salt and pepper


  1. In a pan, sauté the tomato, chili, onion and garlic during 5 minutes. Remove from fire and process.
  2. Spice with salt and pepper and reserve.
  3. In another hot pan with some oil, brown the tortillas during 30 seconds. Remove the tortillas and drain the remaining oil.
  4. In the same pan, fry the eggs looking after the egg yolks do not explode. Once the whites cook, turn the egg around and cook the other side for 15 seconds. Remove immediately from the pan so they do not overcook.
  5. Spray the tortilla with the tomato mixture. Spice with salt, coriander and pepper.
