• 150 grams egg white
  • 300 grams sugar
  • 150 grams softened butter
  • Fresh raspberries
  • Gel food colouring
  • Lollipop sticks


  1. Heat up egg white and sugar over bain-marie
  2. Whisk up to form a meringue
  3. Paint inside of piping bag stripes of colour
  4. Put half meringue mix into the piping bag
  5. Pipe onto baking tray in spirals and bake for 30-40 minutes
  6. Add butter to remaining meringue mix
  7. Add the juice of the raspberries
  8. Pipe buttercream onto one side of the meringue and place lollipop stick on top
  9. Sandwich with other side of the meringue
