Mexican Tortilla Stack

Kate's Mexican inspired tortilla stack is the perfect dish to feed tonnes of hungry friends at your next movie night! It's stacked high with cheese, guacamole and all your favourite toppings!

Supplies

  • 10, 6-inch tortilla wraps
  • 250g mozzarella, grated
  • 230g drained black beans
  • 150g cheddar cheese, grated
  • 150ml sour cream
  • tortilla chips
  • Guacamole:
  • ½ red onion, diced
  • 1-2 tbsp coriander
  • 2 avocados
  • 1 tomato, seeded and diced
  • 1 lime
  • salt & pepper, to taste
  • 1 green chilli
  • Pico de gallo:
  • 2, ½ tomatoes, seeded and finely chopped
  • 1 small garlic clove, crushed
  • 1 green chilli, finely chopped
  • ½ red onion, diced
  • 1 lime
  • 1-2 tbsp coriander
  • salt & pepper, to taste

Steps

  1. For the guacamole, add a tbsp of red onion and coriander into a pestle and mortar and crush to release flavours. Add avocados one at a time and mash until desired consistency.
  2. Transfer to a bowl and mix together with remaining onion, coriander, tomato, chilli and season with salt & pepper.
  3. To add a bit of zing to the guacamole squeeze over lime juice. This also helps to keep it fresh and stop it going brown.
  4. For the pico de gallo, combine all ingredients in a bowl and season with salt & pepper.
  5. In a bowl, crush the black beans with a fork to break them down before mixing in the grated cheddar.
  6. Add the first tortilla to a baking tray and arrange a handful of mozzarella on top. Push it out to the edges to create a flat layer.
  7. Place the next tortilla wrap on top. Spoon on some of the black bean and cheddar mix and push it out to the sides. Add a few dollops of sour cream, this will also act as glue, before placing on the next wrap.
  8. Add another layer of mozzarella then a layer of guacamole. Making sure to add a wrap in between each one. Repeat this order all over again until you have 9 layers of filling sandwiched between tortillas top and bottom. Finally, finish with one final layer of mozzarella and a tortilla on top. You should now have, cheese, black beans, cheese, guacamole, cheese, black beans, cheese, guacamole, cheese.
  9. Place in a preheated oven at 190ºC for 5-10 minutes until the cheese has melted.
  10. Serve with guacamole, pico de gallo and sour cream on top. Finish with a sprinkling of mozzarella and some crushed tortilla chips. Enjoy :D
