Pão de queijo (Brazilian Cheese Bread)

There is nothing better than bread and cheese and our Pão de queijo recipe proves just that. Traditionally eaten at breakfast or as a snack, this popular Brazilian dish is about to become your new favourite thing.

Supplies

  • 170g Tapioca flour
  • ½ tsp salt
  • 160ml whole milk
  • 60ml vegetable oil
  • 1 large egg
  • 85g mozzarella cheese, grated
  • 25g Parmesan cheese, grated

Steps

  1. Preheat oven to 180°C and line a baking tray with parchment paper.
  2. Mix the tapioca flour and salt together in a large bowl, create a well in the centre and set aside.
  3. In a saucepan combine the milk and oil and slowly bring to a boil. Pour the hot liquid into the tapioca flour and mix well. Add the egg and stir again, the mixture should look similar to a thick Choux pastry. Stir through both the cheeses until incorporated and a slightly tacky dough forms.
  4. Take a tablespoon of the mixture and roll into balls and place on the lined tray.
  5. Bake in the oven for 20 - 25 minutes, until puffed up, lightly golden and oozy in the middle.
  6. Eat warm so the cheese is melted and gooey. You also can reheat them before serving.
