- 1 tablespoon butter
- 2 slices bread
- 6 rashers smoked streaky bacon
- Slice your bread, butter one side and place in a griddle pan over a high heat for 30 seconds. Spread the other side with butter, turn and continue to toast for another 30 seconds or until golden and toasted.
- Make a lattice with the bacon pieces and cook on a foil lined baking tray under the grill for approx. 5m until browned and crispy. Spread the toast with mayonnaise. Slice the tomato and lettuce and add to the toast, then finally top with the cooked bacon lattice. Slice in half and serve with a skewer through the centre.
