• 1 sheet of all butter puff pastry
  • 150 milliliters passata
  • 1 tablespoon red pesto
  • 100 grams Goats cheese
  • 1 ball mozzarella
  • Sun blushed tomatoes
  • Handful basil
  • 2 tablespoons pine nuts
  • 100 grams grated parmesan
  • 4 tablespoons extra virgin olive oil
  • 2 eggs


  1. Preheat the oven to 180 degrees C / 350 fan
  2. Remove the puff pastry base and prick all over with a fork
  3. Glaze with egg wash and cook for 8-10 minutes
  4. Meanwhile, mix together the passata and red pesto, remove the puff pastry sheet and spread over the mixture
  5. Spread over the goats cheese, mozzarella and some basil leaves and place in the oven for a further 10 minutes or until cooked
  6. While the pizza cooks, make the pesto by combining basil leaves with pine nuts, parmesan cheese and olive oil
  7. Remove from the oven and spread over the sun blushed tomatoes and pesto and serve
