Pumpkin Spice Truffles
- 120 grams Rich tea biscuits
- 40 grams Cream cheese
- 50 grams Pumpkin puree
- 10 grams Icing sugar
- 1/4 teaspoon Ground Cinnamon
- 1/4 teaspoon Ground Nutmeg
Decoration
- 150 grams White chocolate, melted
- 2x Rich tea biscuits
- 1/4 teaspoon Ground Cinnamon
- 1/4 teaspoon Ground Nutmeg
Steps
Pumpkin Spice Truffles
- Place biscuits into a food processor and blitz until you have fine biscuit crumbs.
- Add in remaining ingredients and blend until smooth and combined. Mixture is done when it forms a ball.
- Use a spoon to scoop small amounts of the mixture and roll in the palm of your hands to form a neat ball. Place onto a baking tray lined with baking paper.
- Place in fridge to set.
Decoration
- Place biscuits, cinnamon and nutmeg into a bag and crush with a rolling pin. Shake crumbs to evenly combine.
- Cover each truffle in melted chocolate and sprinkle over garnish.
- Leave to set and enjoy :D
