Roast Cauliflower with wild Garlic Pesto

How to make roast cauliflower with wild garlic pesto

Supplies

  • 1 Cauliflower, broken into florets
  • Olive oil
  • Salt and pepper
  • 60 grams wild garlic leaves, roughly chopped
  • 50 grams pine nuts
  • 200 milliliters olive oil
  • 1/2 lemon, juiced
  • 50 grams parmesan
  • 10 grams basil leaves
  • Salt and pepper

Steps

  1. Preheat your oven to 200 degrees fan.
  2. Place your cauliflower florets into a baking tray and drizzle with oil, salt and pepper, place into a hot oven for 30 - 40 minutes, giving it a shake every now and again.
  3. Meanwhile, place the pesto ingredients into a food processor and whizz until smooth.
  4. Once the cauliflower is golden, remove from oven and place on a serving dish, drizzle with the wild garlic pesto.
