- 200g beef fillet
- 1 bunch rosemary
- 1 bunch thyme
- 100g egg white
- 200g rock salt
- Sear the beef in a pan on a high heat with butter, but no seasoning at this point. It can be slightly under your preference.
- Leave the meat to rest whilst you mix the salt ingredients. Place the salt and egg whites into a bowl and mix. Pick the herbs and add them in too.
- Place the beef into a small oven tray with sides and cover with the salt mix. Place in a preheated oven at 200C for about 15 minutes.
