• 200g beef fillet
  • 1 bunch rosemary
  • 1 bunch thyme
  • 100g egg white
  • 200g rock salt


  1. Sear the beef in a pan on a high heat with butter, but no seasoning at this point. It can be slightly under your preference.
  2. Leave the meat to rest whilst you mix the salt ingredients. Place the salt and egg whites into a bowl and mix. Pick the herbs and add them in too.
  3. Place the beef into a small oven tray with sides and cover with the salt mix. Place in a preheated oven at 200C for about 15 minutes.
