Supplies
- 120g unsalted butter
- 100 caster sugar
- 50 grams light brown sugar
- 1 teaspoon vanilla
- 1 egg
- 190 grams plain flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Pinch of flakey salt
- 200 grams 70% dark chocolate
- 50g shelled pistachios
Steps
- Preheat the oven to 180.
- Place the butter and both sugars into a bowl and cream with an electric hand mixer. Scrape down the sides to make sure it's totally combined.
- Add the egg and vanilla and beat until fluffy.
- Add the flour, bicarbonate of soda, and salt, and mix until just combined.
- Fold in the chocolate and pistachios (reserving a few of each for the topping.
- Split into 6 balls (the dough should weigh about 600g so each ball should be about 100g of dough).
- Place the balls on a parchment-lined baking tray allowing for room to spread.
- Garnish with the reserved chocolate and pistachios and a sprinkle of flakey salt.
- Bake in the oven for about 10-12 minutes until the edges are golden.
- Remove demo the oven and let cool on the tray until the chocolate has firmed up a bit.
