Supplies

  • 120g unsalted butter
  • 100 caster sugar
  • 50 grams light brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 190 grams plain flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Pinch of flakey salt
  • 200 grams 70% dark chocolate
  • 50g shelled pistachios

Steps

  1. Preheat the oven to 180.
  2. Place the butter and both sugars into a bowl and cream with an electric hand mixer. Scrape down the sides to make sure it's totally combined.
  3. Add the egg and vanilla and beat until fluffy.
  4. Add the flour, bicarbonate of soda, and salt, and mix until just combined.
  5. Fold in the chocolate and pistachios (reserving a few of each for the topping.
  6. Split into 6 balls (the dough should weigh about 600g so each ball should be about 100g of dough).
  7. Place the balls on a parchment-lined baking tray allowing for room to spread.
  8. Garnish with the reserved chocolate and pistachios and a sprinkle of flakey salt.
  9. Bake in the oven for about 10-12 minutes until the edges are golden.
  10. Remove demo the oven and let cool on the tray until the chocolate has firmed up a bit.
