• 6 eggs
  • Pinch of salt
  • Mashed potato
  • cherry tomatoes
  • For the sauce:
  • 10ml Balsamic vinegar
  • 20ml Ketchup


  1. Divide eggs and add salt to the whites and whisk with a hand or standing mixer
  2. Pour the yolks into the bottom of a frying pan.
  3. Carefully layer the whisked wgg whites onto the the egg yolk. Cover and allow to cook through.
  4. When cooked, fold it in half and top with mashed potatoes, cherry tomatoes and sauce to serve.
