Speedy Fish Finger Cheese Toastie

We’re bringing a whole new meaning to the fish finger sandwich with this Birds Eye Cod Fish Finger cheese toastie. Thick cut bread, butter, grated cheese, roasted red peppers and spinach all heated together with the perfectly crisp fish fingers.

Supplies

  • 4 Birds Eye Cod Fish Fingers
  • 100g baby spinach
  • 2 thick slices of bread (roughly 3cm)
  • 1 tbsp butter
  • 40g grated mozzarella and cheddar mix
  • 1 roasted red pepper from a jar, roughly chopped

Steps

  1. Make the toastie: Cook the Birds Eye Cod Fish Fingers as per the packet instructions. Once cooked, set aside.
  2. Place the baby spinach into a colander over the sink, pour over boiling water until wilted, then leave to cool. Once cool, squeeze out the excess water with a spoon. Roughly chop. Roughly chop the roasted red pepper and set both the spinach and pepper aside.
  3. Take the pieces of bread and spread with the butter.
  4. Assemble the toastie: Turn the bread over and start to build your sandwich. On one piece of bread, sprinkle some grated cheese, add the red peppers, Birds Eye Cod Fish Fingers, spinach, and another layer of cheese. Place the remaining slice of bread on top and press down firmly.
  5. To serve: In a medium frying pan, over a low to medium heat, fry the toastie for 3-4 minutes on each side until the cheese has melted and the bread is crispy and golden. Slice the toastie in half and enjoy!
