For the fries

  • Sweet potatoes 700 G
  • Olive oil 3 TBSP
  • Garlic clove, chopped 1 TSP
  • Paprika 1 TSP
  • Salt 1 TSP
  • Black pepper ½ TSP
  • Corn flour 2 TBSP

For the guacamole

  • 2 Avocados, halved and pitted
  • ½ Roma tomato, diced
  • 1 Serrano or jalapeño pepper, sliced
  • ½ Small onion, diced
  • 1 Teaspoon chopped coriander, plus more for garnish
  • 1 lime, juiced
  • Salt to taste

Steps

For the fries

  1. Peel the sweet potatoes and slice them evenly into fry-like pieces.
  2. Soak them in cold water for at least 15 minutes. Remove from water and pat dry.
  3. In a bowl, toss the fries with cornstarch. Add olive oil and toss again.
  4. Spread the fries on a baking sheet evenly without any overlapping.
  5. Bake in a preheated oven at 230°C for 15 minutes.
  6. Flip the fries and continue to bake for another 15 minutes.
  7. While the fries are baking, whisk to combine the garlic powder, paprika, salt, and pepper in a small bowl. Set aside.
  8. When the fries are crispy, remove from the oven and into a bowl. Add the spice mix and toss to coat the fries.

For the guacamole

  1. Place the avocados in a bowl and gently mash with a fork.
  2. Add the tomato, pepper, onion, and lime juice. Stir to combine.
  3. Add salt to taste.
  4. Plate the fries on a large platter. Top with the mound of guacamole and garnish with cilantro.
