  • 50 grams really fine bulgur wheat/cracked wheat
  • 100 grams (2 bunches) flat-leaf parsley, chopped finely
  • 50 grams mint, chopped finely
  • 200 grams (2-3 medium sized) ripe tomatoes, deseeded and diced finely
  • 3 spring onions, finely sliced
  • Juice of 2 lemons
  • 5 tablespoons olive oil
  • Salt and pepper to taste

Steps

  1. Bulgur wheat, chopped tomatoes, olive oil, lemon, black pepper and salt sit together for 10 minutes. It partially cooks it
  2. Chop the herbs and onions
  3. Mix together
  4. Let it marinate it for 10 more minutes
  5. Taste and adjust seasonings if needs be
