• 2 x tortilla wraps
  • Black beans, drained and rinsed
  • Mozzarella cheese, grated
  • Passata
  • Sour cream
  • Tortilla chips
  • Guacamole:
  • 1/2 red onion
  • 1-2 tablespoons coriander
  • 2 avocados
  • 1 tomato, seeded
  • 1 lime
  • Salt & pepper, to taste
  • 1 green chilli
  • Pico de Gallo:
  • 2 1/2 tomatoes, seeded and finely chopped
  • 1 small garlic clove, crushed
  • 1 green chilli, finely chopped
  • 1/2 red onion, diced
  • 1 lime
  • 1-2 tablespoons coriander
  • Salt & pepper, to taste


  1. For the guacamole, add a tablespoon of red onion and coriander into a pestle and mortar and crush to release flavours. Add avocados 1 at a time and mash until desired consistency.
  2. Transfer to a bowl and mix together with remaining onion and coriander, tomato, chilli and season with salt & pepper.
  3. To add a bit of zing to the guacamole squeeze over lime juice. This also helps to keep it fresh and stop it going brown.
  4. For the pico de gallo, combine all ingredients into a bowl and season with salt & pepper.
  5. For the pizza, place a tortilla in a pan over medium heat, spread over black beans and cheese which have been slightly mashed together. Place a second tortilla on top.
  6. Flip the tortilla over and spread over an even layer of passata. Sprinkle on mozzarella and place under a grill until melted.
  7. Garnish with guacamole, pico de gallo and sour cream. Sprinkle over some tortilla chips for an extra crunch. Enjoy :D
