Vegan Mac & Cheese
An epic vegan dish for all our Mac and Cheese lovers!
Supplies
- 250 grams of macaroni
- 1 carrot
- 100 grams sweet potato
- 100 grams cauliflower
- 700 milliliters veggie stock
- 5 tablespoons nutritional yeast
- 1 teaspoon salt
- 1 teaspoon dijon mustard
- Will also need:
- Poly science hand held food smoker
- Applewood chips
- 150 grams ackee
- Crispy Bacon:
- 200 grams coconut flakes
- 2 tablespoons Tamari
- 1 teaspoon smoked paprika
- 1 teaspoon sesame oil
- 2 tablespoons maple syrup
Steps
- Cook the macaroni.. easy
- Steam carrots, cauliflower and sweet potato. Once cooked add in a blender with Dijon mustard, veggie stock, nutritional yeast, salt and ackee and blend. Sauce done!!
- Once pasta is cooked mix in a bowl with the sauce.
- For crispy 'bacon' mix all the ingredients and dehydrate by putting in an oven on the lowest heat for 15 hours.
- Serve in a shallow bowl with the 'bacon' and a glass dome to cover. Then pump the smoke into the dome.
