Vegetable Pakoras
There are two kinds of people in this world: those who know about pakoras, and those that don't. Which are you?
Supplies
- 150 grams gram flour
- 2 tablespoons rice flour
- 1 teaspoon baking powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin
- 1 teaspoon garam masala
- 1/2 teaspoon carom seeds
- 1/2 teaspoon turmeric
- 1 or 2 teaspoons salt
- 1 chilli
- 1 onion
- Some coriander
- Some spinach
- Cashew nuts
- 1 tablespoon oil
- 1 lemon to serve
Steps
- Combine all batter ingredients and mix well. Then add the vegetable mix and leave for 10-15 minutes to let
- The moisture soak into the flour. You need a batter-like consistency so if that doesn't happen, very slowly add more water.
- Heat oil for frying (sunflower/vegetable) - at least one inch, but you can do more if you want.
- Drop tablespoon sized balls into the pan and fry until golden. Don't overfill the pan.
- Dry off on kitchen towel and serve with lemon
- Wedges.
