• For the cake:
  • 1 x 150ml yoghurt
  • 1 yoghurt pot of veg oil
  • 2 yoghurt pots of caster sugar
  • 3 yoghurt pots of self raising flour
  • 3 eggs
  • 1 tsp vanilla extract
  • For the icing:
  • 1 tbsp icing sugar
  • 1 x 150ml yoghurt
  • Handful of granola
  • Berries, to serve


  1. Preheat the oven to 160c fan. Line the bottom of a 9’’ springform pan with greaseproof paper and grease the sides with a little vegetable oil.
  2. Make the cake: place all the cake ingredients in a bowl and mix together to combine. Pour into the prepared cake tin and smooth out with the back of a spoon. Place in the oven and bake for 40 minutes or until a skewer comes out clean.
  3. Once cooled, transfer it to a serving plate. To make the icing mix the icing sugar into the remaining yoghurt. Sprinkle with the granola and serve with berries.
