  • 2 chicken breast
  • 100g Flour
  • 100g breadcrumbs
  • 2 Eggs
  • Vegetable oil, to fry
  • For the sauce
  • 4 soaked chillies
  • 1 shallot (diced and cooked)
  • 2 tbsp Ginger
  • 2 tbsp Garlic
  • 2 tbsp Soy sauce
  • 1 tbsp rice wine Vinegar
  • Pinch sugar

Steps

  1. Cut chicken breast into three pieces, widthways.
  2. Flour, egg and breadcrumb the breast pieces and deep fry for 15 minutes at 170 C.

  4. Soak the chillies for at least a day in plenty of water, then blend them with the rest of the ingredients.
