- For the cupcakes:
- 300g softened butter
- 300g sugar
- 1/2tsp salt
- 6 eggs
- 2tbsp vanilla essence
- 300g self-raising flour
- Red food colouring
- Blue food colouring
- For the frosting:
- 7 egg whites
- 350g sugar
- 1/2tsp salt
- 1tsp vanilla essence
- 455g softened butter
- 1tsp tabasco
- 1tsp mint essence
- Red food colouring
- Blue food colouring
- To decorate:
- Mint candies, crushed
Steps
- Beat the butter with the sugar until it is creamy, about 5 minutes.
- Add the eggs one at a time. Add vanilla extract.
- Add the flour and fold it in gently. Divide the mixture in two and dye one red and one blue.
- Pour batter into a lined cupcake pan.
- Bake for 25 minutes at 180ºC
- For the frosting, beat the whites with the sugar in a bain-marie until the sugar dissolves.
- Remove from heat and continue beating until stiff and glossy.
- Add softened butter a little at a time. Add the salt and the vanilla and beat until everything is mixed.
- Divide the frosting into two and dye one half blue and the other red.
- Crush the mint candies.
- Decorate the cupcakes with the frosting, the crushed candies and swords.
