- 6 eggs
- Pinch of salt
- Mashed potato
- cherry tomatoes
- For the sauce:
- 10ml Balsamic vinegar
- 20ml Ketchup
- Divide eggs and add salt to the whites and whisk with a hand or standing mixer
- Pour the yolks into the bottom of a frying pan.
- Carefully layer the whisked wgg whites onto the the egg yolk. Cover and allow to cook through.
- When cooked, fold it in half and top with mashed potatoes, cherry tomatoes and sauce to serve.
